- 4 chicken breasts cubed
- 1 onion finely chopped
- 1 green pepper cut into chunks
- 1 inch ginger grated
- 2 cloves garlic crushed

- 1 teaspoon ground turmeric
- 2 teaspoons ground cumin
- 1 tin coconut
- Some finely chopped coriander
- S&P

- Pour a tablespoon of vegetable oil into
a large pan, heat through.
- Add the finely chopped onion, grated garlic
& ginger and green pepper.
- Cook through in the pan for 3-4 mins until
the onion is translucent.
- Add the spices and cook out for a further
minute stirring occasionally.
- Add the tin of coconut milk and, then the
chicken and simmer gently for about 8 minutes
or until the chicken is cooked through.
- Serve with rice.
